A grid is for contact sheets and collages, where the images are peers rather than a sequence. Set the number of columns and the rest follows; cells are sized to the largest image so the layout stays even.
Spacing inserts a gap between images, filled with the background colour. A few pixels is enough to keep two photographs from reading as one; a wider gap turns the result into a deliberate composition rather than a join.
The background also fills any area left over when images are different sizes. White disappears into most documents, black suits photographs, and transparent leaves the gaps empty — the last of these forces a PNG, because a JPEG has no way to store transparency.
